🎄👀 Holiday Recipe For Healthy Eyes

Rich in lutein, zeaxanthin, vitamin A, omega-3s, and antioxidants for healthy retinas and sharp night vision.

Here is something new to try this holiday season:

  • Ingredients (2 servings)

    For the base:

    • 1 cup baby spinach (lutein + zeaxanthin → protects macula)

    • 1 medium carrot, chopped (beta-carotene → vitamin A for night vision)

    • 1 cup frozen mango (vitamin A + C → supports ocular surface + collagen)

    • 1 small orange or ½ cup orange juice (vitamin C → strengthens ocular blood vessels)

    • ½ cup Greek yogurt (zinc → crucial for vitamin A processing in the eye)

    • 1 tbsp ground flaxseeds or chia seeds (omega-3s → tear film & retina health)

    • ½ cup chilled water or unsweetened almond milk (more if needed)

    For the Christmas-eye decorations:

    • Kiwi slices (vitamin C + lutein → “iris rings”)

    • Blueberries (antioxidants for retinal cells → “pupils”)

    • Strawberries or pomegranate seeds (festive red)

    • A few almond slivers (vitamin E → protects cell membranes)

    👩‍🍳 Instructions

    1. Combine spinach, carrot, mango, orange, yogurt, flax/chia, and liquid in a blender.

    2. Blend until smooth, thick, and vibrant green — like a Christmas tree for your eyes!

    3. Pour into bowls.

    4. Arrange kiwi slices as eyeballs, blueberries as pupils, and strawberries/pomegranate for holiday sparkle.

    5. Add almond slivers as little eyelashes around the top. Have fun with the design!
